Blue Cheese Mini Burgers with Caramelized Onions and Mushrooms

These burgers are a crowd pleaser and are sure to impress.  What we like about this recipe is that you can bake the mini burgers when you don't have a grill available or the weather is not ideal.  Serve with any side dish.

Burger Ingredients:
2 lbs of Ground Beef
1 heaping tablespoon ground horseradish
3 cloves garlic finely minced
1/4 cup Worcestershire sauce
1 tsp onion power
1/2 cup blue cheese crumbles
salt and pepper
Cheese of your choose for topping-this time we used cheddar but swiss is great too
Mayo for serving
Mini hamburger buns
Baking sheet
Metal rack to put on top of the baking sheet

Topping Ingredients:
1 small container Baby Bella Mushrooms (about 8 ounces) sliced
1 large sweet onion sliced thinly
2 tbs spoons butter
2 tbs spoons olive oil
A few dashes of steak sauce
A few shakes of Garlic powder
Pinch of salt and pepper

Recipe makes 18-20 mini burgers. Serving size 2-3 burgers per person

Using a large sauté pan, warm on medium high temp and add in olive and butter. When butter has melted and after the butter has finished bubbling add the mushrooms and onions. Toss to coat in oil. Cook on medium high for about 5 min stirring occasionally. The onions and mushrooms will produce a liquid. Reduce down by half then cover and turn range temperature to low. Cook for about 15 minutes stirring occasionally. Stir in some salt, pepper, garlic powder and a few dashes of steak sauce.

Mix together worcestershire, garlic, horseradish, and onion powder in a large bowl. Add in ground beef. Mix with hands. Add in blue cheese crumbles and a pinch of salt and pepper and continue mixing with hands. Next form small patties about the size of a large meatball. The mixture should make about 18-20 little burgers. Place metal rack over a large baking sheet and line the little burgers on the rack. This will drain the excess fat while cooking.

Bake the burgers for 30 mins on 375.

Finishing Work--
Butter your buns and put them under the broiler until lightly toasted. Add cheese to burgers and mayo to the buns to your liking. Top the burgers with mushrooms and onions and serve on a platter or large plate.
